Pumkin Roll:
makes 2 large cookie sheets / 1/2 sheet pans

2 cup sugar
6 eggs
1.5 cup pumpkin
1.5 cup flour - ap
2 tsp baking soda
1 tbl cinnamon

Mix all ingredients until lightly mixed
grease pans - well and/or line with paper and grease
split into half spread evenly - the layer will be very thin 1/4" maybe a litte more.

Bake: 350 degrees standard oven 10/12 minutes or convection - 300 degrees

Allow to cool 5 minutes place grease paper or wax on top of pan / flip

Roll into jelly-roll shape - allow to cool completely before icing.

Icing:
4 oz. butter - soft
1 lb. cream cheese
2 cups powdered sugar
1 tsp vanilla

Beat butter until smooth
Add cream cheese beat until smooth
Add sugar and vanilla

keep at room temperature to fill rolls

After cool - unroll spread icing onto cake smooth out

Re-roll - cool to let icing solidify

Serve and enjoy!
